Some people like to put a name on there, or a short gift message. Some like to get a favorite quote on there, just make sure it is short enough to fit the length of the knife.

Another option is to have a custom cover made, which is sometimes called a sheath. Like the rest of the knife, you will have lots of options, including material, colors and more. Leather works really well and lasts a long time, but plastic such as vinyl or even heavy canvas are also great, affordable options.
